Ingredients
- 115g (4oz) frozen mixed berries

115g (4oz) cooking margarine (plus a bit for greasing)
- 115g (4oz) caster sugar
- 4 free-range eggs, beaten
- 285g (10oz) self-raising flour

1 tbsp vanilla extract
Essential Equipment:
- Large microwave-safe bowl (approx. 21.5cm / 8.5″ across)
- Mixing bowl
- Wooden spoon or whisk
- Scales, tablespoon
- Serving plate
- Long sharp knife
How to make
Prep:
Grease your microwave-safe bowl and add the frozen fruit to the bottom.
Mix:
In a separate bowl, cream the margarine, sugar, and vanilla. Gradually beat in the eggs, adding a little flour if it starts to split. Fold in the rest of the flour until you have a smooth batter.
Assemble:
Spoon a layer of batter over the fruit to cover it, then add the rest and level the top.
Cook:
Microwave on full power for 7–9 minutes. It’s done when it’s risen, domed, and springy to the touch.
Turn Out:
Let it sit for a minute, then run a knife around the edge. Place a large plate on top, flip it over, and carefully lift off the bowl.
Serve:
Enjoy warm with custard or cream. Deliciously comforting!
Tip:
You could substitute frozen fruit for jam or chopped soft fruit.
